Festive Adirasam Recipes

These recipes are a great way to incorporate millets, fruits, and vegetables into traditional Adirasam, making them more nutritious and diabetic-friendly while also using sustainable, home-based ingredients. The jaggery adds natural sweetness, while the millets and vegetables provide a unique texture and taste, keeping the recipes traditional but innovative!

1. Foxtail Millet and Pumpkin Adirasam

Servings: 10-12 Adirasams
Cooking Time: 30 minutes (excluding resting time)

Ingredients:

• 1 cup foxtail millet flour
• ½ cup grated pumpkin (squeeze out excess water)
• ½ cup jaggery
• 1 tsp sesame seeds
• ½ tsp cardamom powder
• 2 tbsp ghee
• Water as needed

Method:

1. In a pan, melt jaggery with a little water to form a syrup (5 minutes).
2. Add the millet flour, grated pumpkin, sesame seeds, and cardamom powder. Stir well until a soft dough forms (5 minutes).
3. Rest the dough for 4-5 hours or overnight.
4. Roll the dough into small balls, flatten them into discs (5 minutes).
5. Heat ghee in a pan and fry the discs on low heat until golden brown (10 minutes).
6. Drain excess ghee and let them cool (5 minutes).
    

2. Little Millet and Banana Adirasam

Servings: 10-12 Adirasams
Cooking Time: 30 minutes (excluding resting time)

Ingredients:

• 1 cup little millet flour
• 1 medium ripe banana (mashed)
• ½ cup jaggery
• 1 tsp fennel seeds
• 1 tsp cardamom powder
• 2 tbsp coconut oil or ghee
• Water as needed

Method:

1. Melt the jaggery in water to make a syrup (5 minutes).
2. Mix in the millet flour, mashed banana, fennel seeds, and cardamom powder, and form a smooth dough (5 minutes).
3. Let the dough rest for 4-5 hours.
4. Shape the dough into small discs (5 minutes).
5. Heat coconut oil or ghee and fry the discs until golden brown and crispy (10 minutes).
6. Let the adirasams cool before serving (5 minutes).

3. Kodo Millet and Sweet Potato Adirasam

Servings: 10-12 Adirasams
Cooking Time: 35 minutes (excluding resting time)

Ingredients:

• 1 cup kodo millet flour
• ½ cup boiled and mashed sweet potato
• ½ cup jaggery
• 1 tsp cardamom powder
• 2 tbsp ghee
• Water as needed

Method:

1. Boil and mash the sweet potato (10 minutes).
2. Melt the jaggery in water to create a syrup (5 minutes).
3. Add millet flour, mashed sweet potato, and cardamom powder to the jaggery syrup and mix into a dough (5 minutes).
4. Let the dough rest for 4-5 hours.
5. Shape the dough into small discs (5 minutes).
6. Heat ghee and fry the discs until they turn golden brown (10 minutes).
7. Drain excess ghee and allow them to cool (5 minutes).
    

4. Ragi (Finger Millet) and Jackfruit Adirasam

Servings: 10-12 Adirasams
Cooking Time: 30 minutes (excluding resting time)

Ingredients:

• 1 cup ragi flour
• ½ cup ripe jackfruit pulp (blended or mashed)
• ½ cup jaggery
• 1 tbsp poppy seeds
• 1 tsp cardamom powder
• 2 tbsp ghee
• Water as needed

Method:

1. Melt jaggery in water to form a syrup (5 minutes).
2. Add ragi flour, jackfruit pulp, poppy seeds, and cardamom powder. Mix to form a soft dough (5 minutes).
3. Rest the dough for 4-5 hours or overnight.
4. Shape the dough into small discs (5 minutes).
5. Heat ghee and fry the discs until golden brown (10 minutes).
6. Cool the adirasams before serving (5 minutes).

5. Barnyard Millet and Carrot Adirasam

Servings: 10-12 Adirasams

Ingredients:

• 1 cup barnyard millet flour
• ½ cup grated carrot (squeeze out excess water)
• ½ cup jaggery
• 1 tsp cardamom powder
• 1 tbsp flaxseeds (optional)
• 2 tbsp ghee
• Water as needed

Method:

1. Melt jaggery in water to make a thick syrup (5 minutes).
2. Add millet flour, grated carrot, flaxseeds, and cardamom powder. Mix to form a soft dough (5 minutes).
3. Let the dough rest for 4-5 hours.
